Chicken and Coating

Sandwich Assembly

Instructions
- Marinate the Chicken: Place the chicken cutlets in a shallow dish and cover with buttermilk. Refrigerate and let them marinate for at least 30 minutes to tenderize and add flavor.
- Prepare the Breading Mixture: In a separate bowl, combine the all-purpose flour, panko breadcrumbs, garlic powder, paprika, salt, and black pepper, mixing them thoroughly to create an even coating blend.
- Coat the Chicken: Remove each chicken cutlet from the buttermilk, allowing excess to drip off. Dredge the cutlet in the breadcrumb mixture, pressing gently so the coating adheres well to the chicken.
- Fry the Chicken: Heat about 1/2 inch of vegetable oil in a large skillet over medium heat. Carefully fry each coated chicken cutlet for 3 to 4 minutes per side, until golden brown and the chicken is fully cooked through.
- Drain Excess Oil: Remove the fried chicken from the skillet and place on a paper towel–lined plate to drain any excess oil and keep the crust crispy.
- Toast the Buns: Optionally toast the brioche or sandwich buns lightly to add crispness and warmth.
- Assemble the Sandwiches: Layer shredded romaine lettuce on the bottom half of each bun, add a crispy chicken cutlet, drizzle with Caesar dressing, and sprinkle with grated Parmesan cheese. Place the top bun half and serve immediately.
