Description

This authentic Greek Salad Dressing blends the rich flavor of olive oil with tangy red wine vinegar and aromatic herbs for a vibrant, versatile dressing perfect for salads or as a marinade. It comes together quickly with simple ingredients and can be whisked by hand or blended for smoothness.

Ingredients

Scale

Greek Salad Dressing Ingredients

  • ½ cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 teaspoons honey (optional)
  • 1 garlic clove, finely minced
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon dried oregano
  • ¼ teaspoon dried parsley
  • ¼ teaspoon dried basil
  • ¼ teaspoon salt (plus more to taste)
  • ⅛ teaspoon black pepper (plus more to taste)

Instructions

  1. Combine ingredients: Add the olive oil, red wine vinegar, honey (if using), finely minced garlic, Dijon mustard, dried oregano, parsley, basil, salt, and black pepper to a 16-ounce mason jar.
  2. Shake or blend: Secure the lid on the jar and shake vigorously until all ingredients are well combined. Alternatively, place the ingredients in a high-speed blender or food processor and blend for 10-20 seconds until the dressing is smooth and emulsified.
  3. Use or store: Use the dressing immediately to enhance your salad or store it in the refrigerator in a sealed container for up to one week. Before each use, bring it to room temperature and shake well to redistribute any separated ingredients.

Notes

  • Honey is optional and can be omitted for a more tart dressing or for vegan preferences.
  • Adjust salt and pepper to taste after mixing.
  • Bringing the dressing to room temperature before use ensures the olive oil is not too thick or cloudy.
  • This dressing can double as a marinade for grilled vegetables or meats.
