Instructions

  2. Melt Butter and Make a Roux: In a medium saucepan over medium heat, melt the unsalted butter. Whisk in the all-purpose flour and chopped fresh thyme, cooking until the mixture is lightly browned and bubbly, about 1 minute. This forms the roux which thickens the gravy.
  3. Add Pan Drippings and Simmer: Gradually whisk the reserved pan drippings into the roux to prevent lumps. Bring the mixture to a boil, then reduce heat to a simmer. Continue whisking constantly, cooking the gravy until it thickens, approximately 5 to 10 minutes.
  4. Finish and Season: Stir in the chopped fresh parsley. Season the gravy with kosher salt and freshly ground black pepper to taste. Mix well and adjust seasoning as needed.
