Ingredients
Scale
Gravy Ingredients
- 2 1/2 cups pan drippings from roasted turkey
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 2 teaspoons chopped fresh thyme
- 1 tablespoon chopped fresh parsley leaves
- Kosher salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Strain the Pan Drippings: Pour the turkey pan drippings through a fine-mesh sieve to remove solids. Discard the solids and reserve 2 1/2 cups of the strained drippings. Set aside for later use.
- Melt Butter and Make a Roux: In a medium saucepan over medium heat, melt the unsalted butter. Whisk in the all-purpose flour and chopped fresh thyme, cooking until the mixture is lightly browned and bubbly, about 1 minute. This forms the roux which thickens the gravy.
- Add Pan Drippings and Simmer: Gradually whisk the reserved pan drippings into the roux to prevent lumps. Bring the mixture to a boil, then reduce heat to a simmer. Continue whisking constantly, cooking the gravy until it thickens, approximately 5 to 10 minutes.
- Finish and Season: Stir in the chopped fresh parsley. Season the gravy with kosher salt and freshly ground black pepper to taste. Mix well and adjust seasoning as needed.
- Serve Warm: Pour the gravy into a serving dish or gravy boat and serve warm alongside turkey and your favorite side dishes.
Notes
- For a richer flavor, use turkey drippings with some fat content; skim excess fat if desired.
- Whisk continuously to avoid lumps and achieve a smooth texture.
- If gravy is too thick, thin with additional broth or water.
- Fresh herbs brighten the gravy; feel free to adjust thyme and parsley quantities to taste.
- Use kosher salt sparingly, as pan drippings may already be salty.
