Description
This refreshing Lime Sorbet recipe features a simple combination of freshly squeezed lime juice, sugar syrup, and lime zest, creating a tangy and sweet frozen treat perfect for warm days. The sorbet is made by preparing a simple syrup, blending it with lime juice and zest, and freezing it to achieve a smooth and icy texture.
Ingredients
Scale
Simple Syrup
- ¾ cup sugar
- ¾ cup water
Lime Sorbet
- 1 ¼ cups freshly squeezed lime juice
- 2 tsp grated lime zest
- Mint leaves for serving (optional)
Instructions
- Make the Simple Syrup: In a medium-sized saucepan over medium heat, combine ¾ cup sugar and ¾ cup water. Simmer for 1-2 minutes while whisking occasionally until the sugar dissolves completely. Remove from heat and allow the syrup to cool to room temperature. You should have about 1 ¼ cups of simple syrup.
- Combine Ingredients: Pour the freshly squeezed lime juice into a 9×5-inch metal loaf pan. Add the cooled simple syrup and 2 teaspoons of grated lime zest. Whisk everything together until fully combined.
- Initial Freezing: Place the mixture in the freezer and let it freeze for 3 to 4 hours, or until it becomes mostly firm but not completely solid.
- Blend the Mixture: Transfer the semi-frozen mixture to a high-speed blender or food processor. Blend for 1 to 2 minutes until the sorbet is smooth. Be careful not to overblend to avoid warming the sorbet.
- Final Freeze: Pour the blended sorbet back into the loaf pan. Freeze for an additional 4 hours or up to overnight to allow it to fully set.
- Serve: Before serving, let the sorbet sit at room temperature for a couple of minutes to soften slightly. Serve chilled with an optional sprig of fresh mint for garnish.
Notes
- For best flavor, use freshly squeezed lime juice rather than bottled.
- Do not overblend the sorbet mixture to avoid melting it prematurely.
- If you don’t have a metal loaf pan, any shallow freezer-safe container will work.
- Mint leaves add a fresh aromatic garnish but are optional.
- This sorbet is dairy-free and vegan-friendly.
