Instructions

  1. Make the Simple Syrup: In a medium-sized saucepan over medium heat, combine ¾ cup sugar and ¾ cup water. Simmer for 1-2 minutes while whisking occasionally until the sugar dissolves completely. Remove from heat and allow the syrup to cool to room temperature. You should have about 1 ¼ cups of simple syrup.
  2. Combine Ingredients: Pour the freshly squeezed lime juice into a 9×5-inch metal loaf pan. Add the cooled simple syrup and 2 teaspoons of grated lime zest. Whisk everything together until fully combined.
  3. Initial Freezing: Place the mixture in the freezer and let it freeze for 3 to 4 hours, or until it becomes mostly firm but not completely solid.
  4. Blend the Mixture: Transfer the semi-frozen mixture to a high-speed blender or food processor. Blend for 1 to 2 minutes until the sorbet is smooth. Be careful not to overblend to avoid warming the sorbet.
  5. Final Freeze: Pour the blended sorbet back into the loaf pan. Freeze for an additional 4 hours or up to overnight to allow it to fully set.
  6. Serve: Before serving, let the sorbet sit at room temperature for a couple of minutes to soften slightly. Serve chilled with an optional sprig of fresh mint for garnish.
