This one-pan meal is perfect for a wholesome dinner that combines tender chicken, crispy potatoes, and perfectly roasted broccoli in just 45 minutes.

Ingredients

Scale

Chicken and Topping

  • 1 ½ pounds boneless skinless chicken breasts
  • 4 tablespoons olive oil (divided)
  • ½ teaspoon paprika
  • ¼ teaspoon onion powder
  • 2 ½ teaspoons salt (divided)
  • 1 teaspoon black pepper (divided)
  • 2 tablespoons salted butter (melted)
  • 2 tablespoons everything bagel seasoning
  • ½ cup panko breadcrumbs
  • 4 tablespoons cream cheese
  • 2 tablespoons milk

Vegetables

  • 1 ½ pounds Yukon gold potatoes (sliced 1/8¼ inch thick)
  • 1 large head broccoli (cut into florets)

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) to ensure it reaches the ideal temperature for roasting the chicken, potatoes, and broccoli evenly.
  2. Prepare chicken: Cut the chicken breasts into 5 portions. Using a meat mallet, gently tenderize each piece focusing on the thicker parts without flattening them completely. This helps the chicken cook evenly and stay juicy.
  3. Prepare potatoes: Place the sliced potatoes in a large bowl. Drizzle with 2 tablespoons of olive oil and season with paprika, onion powder, 1 ½ teaspoons salt, and ½ teaspoon black pepper. Toss thoroughly to coat all the slices. Spread the potatoes in a single layer onto a prepared sheet pan, leaving spaces for the chicken pieces.
  4. Add chicken to pan with potatoes: Pat the chicken dry and drizzle with 1 tablespoon olive oil. Rub the oil evenly on both sides of the chicken and lightly season with a pinch of salt and pepper if desired. Nestle the chicken pieces in between the potato slices on the pan, ensuring direct contact with the pan surface for proper browning.
  5. Bake initial phase: In a small bowl, mix the melted butter, everything bagel seasoning, and panko breadcrumbs until combined. Spoon 2-3 tablespoons of this mixture on top of each chicken breast and press gently to help it stick. Place the sheet pan in the oven and bake for 18 minutes to start cooking the chicken and crisping the topping.
  6. Season broccoli: While the chicken and potatoes bake, add the broccoli florets to the same bowl used for the potatoes. Drizzle with the remaining 1 tablespoon olive oil and season with the remaining ¾ teaspoon salt and ½ teaspoon black pepper. Toss well to coat evenly.
  7. Add broccoli and finish baking: Remove the sheet pan from the oven and scatter the seasoned broccoli around the chicken and potatoes in mostly a single layer. Return the pan to the oven and bake for an additional 15 to 18 minutes, or until the chicken is cooked through (internal temperature reaches 165°F), potatoes are tender with golden edges, and broccoli is bright green and slightly roasted.
  8. Make cream sauce: In a small microwave-safe bowl, heat the cream cheese for about 30 seconds until very soft and easy to stir. Add the milk and whisk together until the sauce is smooth and creamy.
  9. Add sauce and serve: Just before serving, drizzle the cream cheese sauce over the chicken, potatoes, and broccoli to add a rich and tangy finish to the dish.

Notes

  • Use a meat thermometer to ensure chicken reaches an internal temperature of 165°F for safety and optimal juiciness.
  • Slicing potatoes uniformly helps them cook evenly. Aim for 1/8 to 1/4 inch thickness.
  • The everything bagel seasoning provides a flavorful, crunchy topping that can be customized or substituted if unavailable.
  • For a dairy-free version, substitute cream cheese with a plant-based creamy alternative and use olive oil or dairy-free butter.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days and reheated in the oven for best texture.
