Instructions

  1. Heat cream and butter: In a small saucepan over low heat, gently combine the heavy cream and unsalted butter. Stir continuously until the butter is fully melted and the mixture is warm but not boiling.
  2. Melt white chocolate: Remove the saucepan from heat and immediately pour the warm cream and butter mixture over the white chocolate in a heatproof bowl. Let it sit undisturbed for 2–3 minutes to soften the chocolate.
  3. Combine mixture: After resting, stir the mixture thoroughly until the white chocolate is completely melted and smooth. If some chocolate remains solid, microwave the bowl in 10-second increments, stirring after each, until fully combined.
  4. Add flavorings: Stir in the vanilla extract, a pinch of salt, and the finely crushed freeze-dried strawberries until evenly distributed throughout the mixture.
  5. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for 1 to 2 hours, or until the mixture is firm enough to scoop.
  6. Form truffles: Once chilled, use a tablespoon to scoop out portions of the mixture. Roll each portion between your palms into a smooth ball shape.
